Previously, van Hooijdonk was food and beverage manager for the famous Pelican Hill resort in Newport Beach, Calif., Where he oversaw the multi-million dollar F&B operation. Prior to his role at Pelican Hill, van Hooijdonk was Food and Beverage Director at Montage Beverly Hills as well as the Intercontinental Miami in Florida. For nearly a decade earlier, he was executive chef at Ritz-Carlton establishments including The Ritz-Carlton, Key Biscayne, Florida; The Ritz-Carlton, Dove Mountain in Arizona; and the Ritz-Carlton, Boston Common in Massachusetts.
Born in New Zealand, van Hooijdonk holds a double degree in Culinary Arts from Overmaas College and Economish College in the Netherlands. He started his hospitality career working in kitchens in the Netherlands before moving to the United States.
Rachel Jacobs – Executive Chef / Food and Beverage Director
March 29, 2021 – Rachel Jacobs has been appointed Executive Chef / Food and Beverage Manager at the newly renovated 203-room Snow King Resort, according to General Manager Gregg Fracassa. As Executive Chef / Director of F&B, Jacobs’ dual role will be to oversee a team of 40 associates, the day-to-day operations of the resort’s iconic restaurant, Haydens Post, banquet kitchen and room service, as well as food income and commodity purchases.
